Festive Demo Menu

Yes a new menu for the Thermomix Demo – It is available from now up until Christmas, perfect if you have already had the other Thermomix Demo Menu & want to see & taste something a bit different, the new menu will last for 1.5 hrs instead of 2 hours plus it’s a lot of fun!

Thermie Green Vegetarian Curry

This is one of the first recipes I added to the Thermomix recipe community around 4.5 years ago & it has been extremely popular – of course you can add chicken to it if you prefer, it’s great to grow my own lime leaves too. You can store lime leaves, chillies & coriander roots in the freezer, so you have most of the ingredients ready to go for an easy week night dinner packed full of flavour. It’s delicious served with my coconut rice recipe too – if you are making the coconut rice recipe in the Model 5 you need to add more liquid either coconut cream or water to take it up to the 1200g marker & it’s a bonus you can steam more veggies on top of the rice while it’s steaming! Thermie Green Vegetarian Curry

Leave out the fish sauce if you are making this for vegetarians.
Ingredients
  • 1 onion cut in half.
  • 1 garlic clove
  • ginger, approx 2cm
  • 1 bunch coriander , including roots
  • 1 tablespoon TM vegie stock concentrate
  • 3 big green chilies, with or without seeds depending how spicy you like it
  • 1 tablespoon peanut oil
  • 1 tablespoon fish sauce, optional- leave out for vegetarian guests
  • 1 heaped teaspoon ground cumin
  • 1 heaped teaspoon ground coriander
  • 3 fresh or frozen kaffir lime leaves
  • 600 grams sweet potato, pumpkin, carrot or potato, 2cm cubed -use any or a combination of all of these vegetables
  • 400 grams light organic coconut cream
  • 400 grams zucchini, broccoli, peas or snow peas, cut into chunks-use any or a combination of all of these vegetables or other favourites you may have
  • 400 gram Chickpeas, drained & Rinsed (one tin)
  • 100 grams spinach leaves, fresh
Instructions
  1. Put onion, garlic, ginger, coriander, tm stock and chillies in the TM bowl chop for 15 sec speed 8, scrape down sides of bowl.
  2. Add peanut oil, fish sauce and ground coriander & cumin and cook for 4 min 100 degrees speed 1.
  3. Add kaffir lime leaves, coconut cream & 600g hard vegetables to TM bowl.
  4. Place spinach leaves into the thermoserver.
  5. Add the rest of the soft green vegetables place into the Varoma -zucchini & broccoli on the bottom & snow peas & peas on the top tray.
  6. Cook for 15 mins reverse Varoma temp speed 1. Check vegetables if any of the steamed vegetables are cooked remove & place into the thermosever.
  7. Add chickpeas to TM bowl & cook for an extra 5 mins reverse Varoma speed 1 only if vegetables need to be cooked further.
  8. Add to the Thermoserver & stir through the spinach.
  9. Serve with coconut rice or jasmine rice.

 

 

Whole Orange Almond & Vanilla Cake

Could the world possibly need another whole orange cake recipe? I’m sure this popular recipe that has been tweaked many times over so here is my version to join all the others. The original recipes had the oranges being boiled for about 1 hour, I just love how the Thermomix makes this such an easy recipe but whizzing up the almonds into almond meal & whizzing up the whole oranges, plus it’s a great one for all those that love gluten free food.

Not many ingredients & it’s super easy to make.

Mill 250g almonds, 200g raw sugar & 2/3 of a vanilla bean with 2/3 tsp cream of tartar & 1/3 of a tsp bicarb soda for 20 secs speed 9.

 

Add 2 oranges that have been cut in half & 3 eggs chop on speed 7 for 10 secs, scrape down the bowl & repeat. Pour into a lined & greased 20 cm tin & bake for 45 mins at 180 degrees.

While the cake is cooking, place 50g sugar & 1/3 vanilla bean with zest from 1 orange into the TM bowl & chop for 20 secs speed 10. scrape down the bowl & add 50g orange juice cooking for 5 mins 100 degrees speed 1 & then add 25g butter & cook for 3 mins 80 degrees speed 1.

 

Skewer the hot cake a few times & pour the syrup over.

You may like to decorate with orange segments fresh lemon thyme & rosebuds if you are feeling a bit fancy 🙂

 

Whole Orange Almond & Vanilla Cake

Ingredients
  • Cake
  • 250g Almonds
  • 200g Raw Sugar
  • ⅔ of a Vanilla Bean
  • 2 oranges with the peel still on, cut into halves
  • 3 eggs
  • Optional Syrup
  • ⅓ of a Vanilla Bean
  • Zest from 1 Orange
  • 50g Raw sugar
  • 50g Orange Juice
  • 25g Butter
Instructions
  1. Heat the oven to 180 degrees & grease & line a 20cm cake tin.
  2. Place almonds, vanilla bean & sugar into the TM bowl & chop for 20 secs on speed 10.
  3. Add the oranges & eggs & chop for 10 secs on speed 8.
  4. Pour mixture into the prepared cake tin & bake for 45 mins or until cooked.
  5. If you are making the syrup place the sugar, orange zest & vanilla bean into the TM bowl & chop for 20 secs on speed 10.
  6. Add the juice & cook for 5 mins, 100 degrees, on speed 1. Add the butter & cook for 3 mins, 80 degrees speed 1.
  7. When the cake comes out of the oven poke a skewer through the cake multiple times all over the cake & pour the syrup over the cake.

 

 

Family Favourite Lamb Pie topped with Sweet Potato Mash

Weekday family comfort food at it’s best & it’s hubby’s favourite dinner too, so I know how to get into his good books -just make this for dinner & some apple pie with custard for dessert 🙂

Family Favourite Lamb Pie topped with Sweet Potato Mash

Comfort food to keep the whole family happy - try different veggies or a combo of veggies for the topping, cauliflower, potato, parsnip, jerusalem artichoke.
Ingredients
  • 1kg lamb, cubed
  • 2 cloves garlic
  • 2 each sprigs fresh rosemary and thyme leaves
  • 1 brown onion halved
  • 2 sprigs fresh flat leaf parsley
  • 400g tomatoes, diced, canned (or fresh cherry tomatoes)
  • 50g tomato paste
  • 100g frozen peas
  • 1 carrot halved
  • 1 celery stick cut in two
  • 1tbs Stock Concentrate
  • Salt & Pepper, to taste
  • 2 bay leaves, fresh, or dried
  • 10g cornflour (optional)
  • 20g olive oil
  • Sweet Potato topping
  • 1kg sweet potato cubed, no need to peel
  • 50g Good Parmasen cheese
  • 250g milk or cream
  • Salt & pepper to taste
  • 30g Butter
  • 1 clove garlic
Instructions
  1. TOPPING- Chop parmasean cheese (and garlic) for 5 secs speed 10.
  2. Set it to one side.
  3. Insert the butterfly whisk & add your sweet potatoes, milk or cream (or a mix of both) salt & pepper, cook for 15 - 20 mins 100 degrees speed 1 until cooked completely.
  4. Add the butter & mash for 20 secs speed 4.
  5. Place to one side while you make the filling (or you can make the filling first & then make the topping, your choice!)
  6. LAMB FILLING -Place garlic & herbs into TM bowl & chop for 5 secs speed 7.
  7. Add onion, carrot & celery & chop for 5 secs speed 4, you may need a couple of seconds longer depending on their size.
  8. Scrape down side of the bowl add the oil & saute' for 3 mins Varoma temp speed 1.
  9. Add lamb & cook 10 mins 100 degrees reverse speed 1.
  10. Add remaining filling ingredients except the peas & cook for 20 mins 100 degrees reverse speed 1. Add the peas & cook for another 5 mins 100 degrees reverse speed 1.
  11. Pour mixture into a large baking dish.
  12. Spread with your sweet potato topping & cheese.
  13. Bake in the oven at 180 - 200 degrees for 20 mins or until brown.

Fresh Pasta Photoshoot

What a fun morning we had at TAFE in the studio – I whipped up a batch of fresh pasta dough in the Thermomix (2 eggs & 200g flour with an optional tbs olive oil & kneaded for 2 mins in the Thermomix) I got out the pasta machine & rolled it out. I wanted to try a different style of food photography – after getting my classmate to be a hand model – I decided I wanted my own “posh lady” hands in the shot instead & was very pleased with quite a few of the photos I got. After a bit of editing I will probably use this first shot for our end of year exhibition.
